Chocolate mousse with extra virgin olive oil

Different than your usual chocolate mousse!

This rich and soft chocolate mousse consists of only four easy ingredients, one of them being our eumelia Ancient Grove Extra virgin olive oil. This recipe is not only the perfect dessert to make for friends and family but also proves the diverse use of extra virgin olive oil. Ideally, we choose the Ancient Grove EVOO with rich and complexed flavor profile, nutty long aftertaste and pungency that pairs perfectly with the dark chocolate.

With the protein added from the eggs and the raw high-phenolic EVOO, we can even say that this mousse is a nutritious and healthy dessert!

Ingredients

150 gr dark chocolate (60% – 70% cocoa)

100 ml eumelia Ancient Grove extra virgin olive oil

4 large organic eggs

50 gr brown organic sugar

1/4 tsp sea salt

Method

First roughly chop the dark chocolate and melt it in a water bath. When it is almost melted, remove from the water bath an set it aside to cool down.

While the chocolate is cooling, seperate the egg white from the yellow and beat the egg white with some sea salt until it’s firm.

Mix the egg yolk with the organic sugar and mix it until it becomes a thicker paste, about double the volume.

When the chocolate is ready, mix in the Eumelia extra virgin olive oil and pour the mixture into the egg yolk cream. Blend soflty with a spatula until there are no more visible streaks to see.

Now slowly fold in the egg white, about 1/3 at a time and carefully turn it into a creamy and light mousse, withouth any parts of the egg white or yolk visible.

With a big ladle put one scoop in a cup of your choice and let the mousse cool down in the fridge for at least 1 hour.
